Grilling and Chilling Cocktail

“Nothing says summer to me like firing up the grill and hanging out with friends and family,” says Sprewell of this drink, which features juicy grilled peach. “This simple, refreshing cocktail is perfect for grilling and chilling out on a hot summer day.”

Ingredients

1 half peach, grilled
1 ½ ounces brandy (Sprewell suggests D’usse VSOP Cognac) or aged rum
½ ounce Martini + Rossi Fiero
¾ ounce lemon juice
¾ ounce Demerara Syrup (or simple syrup made with turbinado sugar)
4–5 mint leaves
Ginger beer, to top
Fresh mint, for garnish

Directions

Brush the peach half lightly with olive oil. Using an outdoor grill or grill pan, grill each side over medium heat for 4–5 minutes. Let cool.

In a cocktail shaker, muddle grilled peach. Add remaining ingredients and ice. Shake well, and double strain into a rocks glass over crushed ice.

Top with a splash of ginger beer and garnish with mint.
