“Our customers are a wine-savvy crowd, so we have to know what’s trendy,” says Bank Atcharawan, the chef, owner and wine director of the off-Strip eatery. It’s a sommelier hangout, with a list heavy on grower Champagne and aromatic white wines with a touch of sweetness that pair well with intense Thai flavors.
