Chef Jason Paluska cooks creative comfort food inspired by farmers’ markets—smoked pork belly, for example, might come with roasted berries, pickled summer peppers and candied brittle of fat local almonds. Domestic wine is focused solely on selections from Santa Barbara County, while imports are mostly Old World producers both iconic and emerging.
Riot Dish: “The brussels sprouts have been our signature dish since our opening in August of 2013. An unexpected hit, the crispy sprouts are served with a garum fish sauce, serrano chili, medjool dates and lime. Our loyal regulars would be up in arms if we were to take them off of the menu.”
