A Classic Boulevardier With an Irish Whiskey Twist

The classic Boulevardier is made with bourbon; this lively variation spotlights Irish whiskey, enriched with crème de cacao–accented vermouth.

“I always thought something was missing [from the classic] so I decided to make something with chocolate,” says Spyridon Koklas, who named the drink in homage to his own Greek heritage.

While The Shelbourne makes its cacao vermouth in-house, to approximate the effect at home Koklas suggests spiking sweet vermouth with a splash of crème de cacao.

El Greco Madness

Ingredients

1 ounce Irish whiskey (Koklas uses Redbreast 12 Irish Whiskey)
1 ounce Aperol
1 ounce cacao vermouth (¾ ounce sweet vermouth mixed with ¼ ounce crème de cacao)
1 dash orange bitters
Grapefruit peel, for garnish
Grated nutmeg, for garnish

Directions

Shake all ingredients with ice. Strain into coupe glass over large ice cube. Garnish with grapefruit peel and nutmeg.
